O pão da "preguiça" de Nigel Slater | Nigel's lazy loaf


Pão de bicarbonato de sódio é uma variedade de pão rápida em que o bicarbonato de sódio é utilizado como um agente de fermentação em vez da levedura. Os ingredientes do pão de soda tradicional são a farinha, o bicarbonato, o sal, o açúcar e o leite coalhado (ou buttermilk). O leite coalhado contém ácido láctico, que reage com o bicarbonato de sódio para formar pequenas bolhas de dióxido de carbono.

O bicarbonato de sódio começa a actuar logo que entra em contacto com o ácido do buttermilk (que aqui substitui por iogurte grego). O gás produzido, e que vai fazer o pão crescer, tem de ser aproveitado muito rapidamente por isso a massa deve ser trabalhada o mais rápido possível e colocada no forno.


Nesta receita, Nigel Slater prova que fazer o seu próprio pão não tem que ser um trabalho demorado ou árduo.

Ingredientes (para um pão médio)

225 g de farinha de trigo integral
225 g de farinha de trigo
1/2 colher de chá de sal
1 colher de chá de açúcar
1 colher de chá de bicarbonato de sódio
350 ml de iogurte grego



Preparação

1. Preaqueça o forno a 220 ºC. Coloque um tacho de barro e a tampa no forno.

2. Numa tigela grande, misture a farinha, o sal, o açúcar e o bicarbonato de sódio. Deite o iogurte grego, e misture tudo até obter uma massa macia. Trabalhando rapidamente (o bicarbonato de sódio vai começar a actuar imediatamente), molde a massa no formato de um pão redondo.

3. Retire a caçarola quente do forno, polvilhe o interior com um pouco de farinha, e em seguida, deite a massa. Cubra com a tampa e leve ao forno. Deve estar pronto ao fim de 25 minutos. Retire do forno, deixe arrefecer por 5 minutos antes de o tirar do tacho e deixe arrefecer um pouco antes de comer. (Este pão é melhor servido quente)


 
  


Soda bread  is a variety of quick bread traditionally made in a variety of cuisines in which sodium bicarbonate is used as a leavening agent instead of the more common yeast. The ingredients of traditional soda bread are flour, baking soda, salt, sugar and buttermilk. The buttermilk in the dough contains lactic acid, which reacts with the baking soda to form tiny bubbles of carbon dioxide.

The bicarbonate of soda starts work as soon at it meets the acidity of the buttermilk (here replaced by greek yogurt). The gas it produces, and wich will make the bread rise, must be harnessed pretty quickly so work as fast as possible when shaping the loaf and getting it into the oven.

In this recipe, Nigel Slater proves that making your own bread doesn't have to be time-consuming or hard work.

Ingredients  (medium-sized loaf)

225 g wholemeal flour
225 g plain flour
1/2 tsp salt
1 tsp sugar
1 tsp bicarbonate of soda 
350 ml greek yogurt
Preparation

1. Preheat the oven to 220 ºC. Put a large cassarole dish and its lid into the oven.

2. In a large bowl, mix the flours, salt, sugar and bicarbonate of soda together. Pour in the greek yogurt, bringing the mixture together as a soft dough. Working quickly (the bicarbonate of soda will start working immediately), shape the dough into a shallow round loaf.

3. Remove the hot casserole dish from the oven, dust the inside lightly with flour then lower in the dough. Cover with the lid and return to the oven.The bread should be ready after 25 minutes. Remove from the oven and leave in place for 5 minutes before turning out and leaving to cool slightly before eating. (Soda bread is best eaten warm)
