Bacalhau confitado com lentilhas, chouriço e "sumo" de piperade | Olive oil-poached cod with lentils, chorizo and piperade "jus"



O bacalhau confitado em azeite fica saboroso e macio,  e mantém o sabor natural do mar. Neste prato, há um contraste interessante entre o piperade, o bacalhau e as lentilhas com chouriço. Um prato simples, rústico e muito saboroso!

Ingredientes (para 4)

Piperade (estufado de cebola, pimento e tomate )

3 c. sopa de azeite
2 dentes de alho 
1 cebola grande, descascada e finamente cortada em pedaços com cerca de 2 cm
1 folha de louro
1 pimento vermelho, sem sementes e cortado em pedaços
com cerca de 2 cm
1 pimento amarelo, sem sementes e cortado em
pedaços com cerca de 2 cm
3 tomates, sem pele e sem sementes, picado (ou 400 g de tomate pelado de lata)
100 ml de água
sal grosso
 

Bacalhau confitado e lentilhas 
 
200 ml de caldo de peixe
4 postas de bacalhau, com pele (cerca de 150 g cada)
Sal grosso
600 ml de azeite (ou o suficiente para cobrir o bacalhau numa panela pequena)
2 dentes de alho levemente esmagados 
1 folha de louro
100 g de chouriço, cortado
em cubos do tamanho de ervilhas
200 g de lentilhas, cozidas
Folhas de salsa ou manjericão, para servir

Preparação

1. Prepare a piperade : aqueça o azeite numa panela em lume médio. Adicione o alho e refogue até ficar ligeiramente dourado e aromático. Adicione a cebola e a folha de louro e deixe cozinhar em lume baixo, mexendo ocasionalmente, até que a cebola esteja macia e translúcida, cerca de 5 minutos. Acrescente os pimentos e continue a cozinhar, mexendo ocasionalmente até ficar macio, cerca de 10 minutos. Junte o tomate, adicione a água e reduza o lume para baixo. Cozinhe muito suavemente por 45 minutos a uma hora, mexendo sempre para que não agarre à panela. O piperade está pronto quando a maior parte do líquido se evaporou e fica com uma consistência semelhante a geleia.

2. Para preparar o "sumo", coloque metade da piperade numa pequena panela com o caldo de peixe e leve a ferver. Transfira para um liquidificador e triture até obter um puré suave. Deite novamente na panela e mantenha quente. Numa panela separada, aqueça o restante piperade e mantenha aquecido.

3. Coloque o azeite numa panela pequena onde irá cozinhar as postas de bacalhau. Adicione o alho e a folha de louro e coloque em lume baixo. Quando atingir 60 ºC, coloque as postas no azeite. Aqueça novamente até aos 60 ºC e deixe por 8-10 minutos, para o bacalhau cozinhar lentamente. Teste uma das postas, pressionando-a com as costas de uma colher, vai começar a lascar quando estiver pronta.

4. Prepare as lentilhas: aqueça um fio de azeite numa pequena frigideira em lume médio. Refogue o chouriço até largar parte da gordura. Reduza o lume para baixo. Adicione as lentilhas e aqueça suavemente, mexendo ocasionalmente.

5. Para servir: divida o piperade quente entre quatro tigelas quentes e coloque as lentilhas por cima. Retire cuidadosamente as postas de bacalhau do azeite, sacuda para retirar o excesso de azeite e coloque em cima das lentilhas. Deite o "sumo" de piperade ao redor do peixe e decore com as folhas de salsa ou manjericão.


 


Gently poaching cod in olive oil gives it delicious soft flesh and preserves the natural flavour of the sea. In this dish, there is a contrast between the piperade, the soft fish and the lentils with the chorizo. A simple, rustic and tasty dish.

 Ingredients (serves 4)

Piperade (onion, pepper and tomato stew)

3 tbsp olive oil
2 garlic cloves
1 large onion, peled and finely cut into 2 cm pieces
1 bay leaf
1 red pepper, de-seeded and sliced into 2 cm pieces
1 yellow pepper, de-seeded and sliced into 2 cm pieces
3 tomatoes, peeled and de-seeded, and roughly chopped (or 400 g of can peeled tomatoes)
100 ml water
Corse salt

Oil-poached cod and lentils

200 ml fish stock
4 cod fillets, skin on (about 150 g each)
Coarse sea salt
600 ml olive oil (or enough to cover the cod in a small pan)
2 garlic cloves, slightly crushed
1 bay leaf
100 g chorizo, cut into pea-sized dice
200 g lentils, cooked
Parsley leaf or basil leaves, to serve

Preparation

1. Prepare the piperade: heat the olive oil in a pan over medium heat. Add the garlic and gently sauté until slightly golden and aromatic. Add the onion and bay leaf to the pan and sweat down, stirring occasionaly until the onion is soft and translucent, about 5 minutes. Add the peppers to the pan and continue cooking, stirring every few minutes until softned, about 10 minutes. Stir the tomato through the onion and pepper mix, add the water and reduce the heat to a low simmer. Very gently cook the piperade for another 45 minutes to an hour, stirring frequently so it doesn't stick to the pan. The piperade is ready once most of the liquid has evaporated and it has jam-like consistency. 

2. To prepare the piperade jus, place half the piperade in a small pan with the fish stock and heat to a simmer. Transfer to a blender and purée untill smooth. pour back in the pan and keep warm. In a separate pan, heat the remaining piperade and keep warm.

3. Place the olive oil in a small pan that will hold the cod fillets. add the garlic and bay leaf and place over a low heat. When it reaches 60 ºC slide the fillets into the oilive oil. Bring the oil back to 60 ºC and leave for 8-10 minutes for the cod to gently poach. Test a piece by pressing it with the back of a spoon, it will start to flake when ready.

4. Prepare the lentils: heat a small glug of olive oil in a frying pan set over medium heat. Sauté the chorizo until is golden and has released its oil. Reduce the heat to low. Add the lentils to the pan and gently heat through, stirring occasionaly.

5. To serve: divide the warm piperade between four warm bowls and place the lentils on top. Gently lift the cod fillets from the oil, shake off the excess oil and place on top of the lentils. Pour the piperade jus around the fish and decorate with the parsley or basil leaves.
