Vieiras com mozzarella e ponzu | Scallops with mozzarella and ponzu

Uma receita de vieiras fritas, com mozzarella e manjericão, do livro "Cozinha Japonesa com Harumi". Harumi Kurihara é a mais conhecida autora de livros de cozinha do Japão, e apresenta neste livro as suas receitas caseiras favoritas. Num estilo simples, pretende mostrar receitas de fácil execução, com ingredientes comuns e com bom sabor e textura. Esta receita de vieiras fritas com mozzarella é disso um bom exemplo, com a particularidade de misturar sabores japoneses e italianos. São acompanhadas por um molho clássico da cozinha japonesa, o molho de soja ponzu, aqui numa versão mais simples, com um sabor ácido e aroma cítrico que combina muito bem com o crocante das vieiras. Uma boa sugestão para uma entrada quente de uma refeição japonesa.

Ingredientes (para 4)

12 vieiras grandes, sem o coral
1 bola de mozzarella de bufala
12 folhas de manjericão fresco
Sal e pimenta
1 ovo médio, batido
Farinha, para revestir as vieiras
Pão ralado, para revestir as vieiras
Óleo vegetal, para fritar
Gomos de limão
Molho de soja ponzu*
Piripiri (opcional)












*Molho de soja ponzu:
100 ml de mirin
100 ml de molho de soja
60 ml de sumo de limão (ou lima, se preferir)
1 tira de 5 cm de konbu

Preparação

1.
Corte cada vieira ao meio, na horizontal. Fatie a mozzarella em 12 pedaços, com aproximadamente a mesma espessura das metades de vieira.

2.
Coloque uma fatia de mozzarella e uma folha de manjericão entre as duas metades de vieira. Tempere com um pouco de sal e pimenta.

3.
Envolva cada vieira em farinha, de seguida envolva-a no ovo batido, e finalmente cubra-a com pão ralado.

4.
Aqueça o óleo numa frigideira de modo a cobrir as vieiras, e quando estiver quente coloque cuidadosamente as vieiras e frite-as até ficarem castanho-douradas e estaladiças. Escorra para remover o excesso de óleo.

5.
Sirva quentes com quartos de limão, molho de soja ponzu e piripiri.



Para preparar o molho de soja ponzu:

1.
Coloque o mirin numa caçarola e deixe levantar fervura. Deixe cozinhar em lume brando por 2-3 minutos para queimar o álcool. Retire do lume.

2.
Adicione o molho de soja e o sumo de limão. Para remover o excesso de sal do konbu, lave-o em água corrente e seque-o ou limpe-o com um pano húmido. De seguida, junte-o à mistura.

3.
Deixe arrefecer, retire o konbu e guarde no frigorífico. Pode ser usado durante uma semana.

In a simple style, the recipes are easy to prepare, with common ingredients and with good flavor and texture. This recipe of fried scallops with mozzarella is a good example of, with the particularity of mixing Japanese and Italian flavors. A classic Japanese sauce accompanies them, the ponzu soy sauce, here in a simpler version, with an acidic flavor and citrus aroma that combines very well with the crunchy scallops. A good suggestion for a hot entree of a Japanese meal.

Ingredients (serves 4)

12 large scallops, without coral
1 ball of buffalo mozzarella
12 fresh basil leaves
Salt and pepper
1 medium egg, beaten
Flour for coating scallops
Breadcrumbs, to coat the scallops
Vegetable oil for frying
Lemon slices
Ponzu soy sauce *
Piri piri (optional)










* Ponzu soy sauce:
100 ml mirin
100 ml soy sauce
60 ml lemon juice (or lime if you prefer)
1 strip  5 cm of konbu

Preparation

1.
Cut each scallop in half, horizontally. Slice the mozzarella into 12 pieces, about the same thickness as the scallop halves.

2.
Put a slice of mozzarella and a basil leaf between the two scallop halves. Season with a little salt and pepper.

3.
Wrap each scallop in flour, then wrap it in the beaten egg, and finally cover it with breadcrumbs.

4.
Heat the oil in a frying pan, enough to cover the scallops, and when hot, carefully place the scallops and fry them until golden brown and crispy. Drain to remove excess oil.

5.
Serve hot with lemon slices, soy sauce and piri piri.



To prepare the soy sauce ponzu:

1.
Place the mirin in a saucepan and bring to the boil. Let it cook on low heat for 2-3 minutes to burn the alcohol. Remove from heat.

2.
Add the soy sauce and the lemon juice. To remove excess salt from konbu, wash it under running water and dry it or wipe it with kitchen paper. Then, add it to the mixture.

3.
Let cool, remove konbu and store in refrigerator. It can be used for a week.
